Weber Style Lemon Chicken

Ingredients:

  • 4 chicken Maryland pieces or drumsticks
  • 1/2 cup flour
  • 1 tablespoon smoked paprika
  • Olive oil spray
  • Salt and pepper

For the sauce:

  • 2 tablespoons olive oil
  • 1 tablespoon lemon zest
  • Juice of 1 1/2 lemons
  • 1 tablespoon lite soy sauce
  • 3 cloves garlic, chopped
  • Salt and pepper

For serving:

  • Cooked rice
  • Salad greens

Instructions:

  1. Preheat your Weber grill , allow about 45 mins for the coals to become white.
  2. In a large plastic bag, combine the flour and smoked paprika. Season the chicken Maryland pieces with salt and pepper, then place one piece at a time in the bag. Shake the bag until the chicken is coated in the flour mixture.
  3. Spray a tray with olive oil and place the chicken Maryland pieces on it. Add spoon of butter on top.
  4. Put the tray on the grill and cook for 30 minutes.
  5. While the chicken is cooking, make the sauce. In a small bowl, combine the olive oil, lemon zest, lemon juice, lite soy sauce, chopped garlic, salt, and pepper.
  6. After 30 minutes, turn the chicken Maryland pieces and pour the sauce over them.
  7. Cook for an additional 30 minutes, or until the chicken is cooked through and the skin is crispy.
  8. Serve the Lemon Chicken hot with cooked rice and salad greens on the side.
